Ok, clearly I suck at blogging. I'm so behind on my posts.

Going to warp speed...coherence may need to be sacrificed...

Indian Meal #3

Make paneer. Cheese = milk + lemon juice.


Curds separating from whey.


Strain that sucker.


Mmmm.


Apparently you can mix some flour in and beat it to get firmer consistency.


Smoosh flat.


Sneak many squares into mouth before sauteeing.


Moving on to saag, do the usual garlic + spices routine.



Heavy cream makes the world go round.


Saag paneer really has to be one of my most favorite Indian dishes.


Maya magically whipped up aloo gobi while I was distracted.


Dinner served! Couple of Maya's lab mates came over to partake. Plenty of vindaloo leftover for all.

Indian Meal #4

Maya soaked lentils and rice overnight.


Then busted out her crazy dosa grinder machine.


Look at those grains get pulverized.


Resulting in a creamy batter which we fermented overnight.



Apparently, dosa making is an art which I did not have patience for (but could enjoy as a downstream consumer). Here are a few delicate beautiful dosas Maya produced.


Maya whipped up some potatoes to eat with the dosas.


She also made chicken curry which I did not get any pics of (see left end of plate) but thankfully got to eat plenty of. Infinitely delicious.

Saag Paneer

1 gallon whole milk
Juice from 2 lemons
1 tbs cumin
1 tsp mustard seed
5 cloves garlic
1/2 tsp chili powder
1 tsp tumeric
1 lb spinach (we used baby spinach from those salad packages)
2 dried chili peppers
1 tomato
Some heavy cream.

To make paneer, bring milk to boil. Let boil 1 min, then turn off. Add lemon juice and stir continually until curd separates from whey. Whey should look clear. Strain in cheese cloth and colander. Rinse well under cold water. Squeeze out fluids, tie up, and hang.

Cook garlic in oil with spices until well browned. Blanch spinach and chop (or use food processor). Add to garlic, add chili pepper Add 1 tomato, seeded and chopped. Let cook for a while.

After cheese has dried out a bit, press into a pan. Cut into cubes and sautee lightly in oil. Add cubes to spinach. Lastly add salt and some heavy cream to taste.

Aloo Gobi

1 cauliflower head
frozen peas
5 garlic
1 onion
1 tomato

No real recollection of how this was made. I know garlic and onion was sauteed per usual (just use the same spices as saag paneer). Add 1 tomato, seeded and chopped. Add cauliflower (florets quartered), cook with lid on for 5 min. Add frozen peas and salt. Cook until tender. If excess liquid, remove lid and cook off liquid.
